Based in Denver, Colorado, Elevation Artisan Meats have a passion for the art of charcuterie and salumi. Owner Chad Nelan started his career as a butcher behind the retail counter, and he had been making charcuterie in his home for more than a decade. He founded Elevation Artisan Meats in 2013 and the company continues to grow due to their creative flavors and quality charcuterie.

Barley Wine Salami: A play on the beer-mustard combination, this salami is made with bourbon, barrel-aged barley wine, and golden mustard seeds.
Mole Salami: Inspired by the famous Mexican mole, this salami is made with a spice blend of chilies, garlic, cinnamon and oregano. A local chocolate stout is used to add the authentic flavor derived from a slow cooked mole.
Fennel Pollen Salami: This traditional recipe is made with imported Italian Fennel Pollen and local red wine.
Their salami is made with 100% humanely raised pork, no added antibiotics or hormones. 100% vegetarian fed. No Nitrates or Nitrites (except those naturally occurring in sea salt & celery powder).
